Veg, non-veg, and whether both are served
A non-veg menu is typically ₹150–₹400 a plate more. Running both means two kitchens, two sets of servers and two counters, and caterers price that overhead in — often more than the food difference itself.
Staff ratio
One server per 25 guests is a queue at the buffet; one per 15 is a wedding that flows. It is a real cost line and a real difference on the night, and it is the first thing quietly cut when a caterer matches a lower quote.
Season, and the wastage nobody prices
Peak-season rates run 15–25% above summer. And caterers cook for 10–15% above your guarantee as standard — worth knowing, because it is why the final bill often lands above the plate rate times the headcount.
